Is there a way to do semantic search against data in dataverse/SP? I'll do the embeddings, i'm familiar with all of that.

There is no built-in feature to do this exactly. While Dataverse search does support some AI support, enabling specific natural language interpretations and synonyms, I believe you are asking for more than that.

From a Dataverse perspective you would have to export the data to Azure to enable it on top of the data there.

From a SharePoint perspective the answer is pretty much the same, except that it has no specific AI searching built in atm.

I cannot tell you what is on the horizon for features, but not atm. You would have to integrate the data with Azure (AI/Cognitive) to get that.
