Hello
I am creating a Sharepoint library
Each of my diary entries will have its own folder
Is there is a way that I can have my screen download all of the documents in a folder into a local collection for use offline?

Sorry, I missed that you wanted to do it inside the app. In general offline use for Power Apps is designed for Mobile devices currently (limitations on LoadData and SaveData). Mobile devices are limited in terms of storage space so it can be an issue when working with documents.
I am able to save using SaveData on the device, the documents will be very small
What you'll need to do then is put whatever code you use to save the file locally in a collection inside a ForAll() function. To SaveData/LoadData you need to work with a local collection.
