I'm currently using an Excel form based on macros as a contract generator. You fill in some blanks, select some options and then based on what you select it will generate a contract in Word.
Is it possible for a chatbot (or something similar to replicate this).

copilot might not be able to generate contracts.
However, you use copilot to get answers of blanks which are required to generate the contract and send this information to Power Automate. In power automate you can use word template and then action to populate that word template based on input that copilot can send to Power Automate.
There are two ways you can get answers to your blanks either by asking a question in copilot or may be generating adaptive card and getting all details at once.
