POC Name Disappearing when going from "View Form" to "Edit Form"

Hi there, I am working on a PowerApp for project management and am using forms to make the user interface easier.  My primary screen is "ViewProjectPortfolio" where I have a gallery to view all of my projects and a View Form to see key details of the selected project.  I then have a button at the top that says "Update Project", which takes you to the "EditThisProject" screen to edit the project details in full (not just the key details). The form on this page is in Edit Form mode. 
 
When I'm on the EditThisProject screen, I can select the "ProjectOwner" from a dropdown list.  When I hit Save, it will SubmitForm(EditThisProject) successfully and navigate back to the ViewProjectPortfolio screen. The ProjectOwner data is in tact when I get to this screen and has updated on the connected microsoft list. 
 
The problem is when I go into editing this project again.  If I go in again, the form clears the ProjectOwner field even if that is not the field I'm updating. I'm not sure why - all of the default settings are stock, not custom, and match the rest of the form (which does NOT have this issue).  I have not used Clear or ClearCollect functions anywhere, and the only place I use Reset or ResetForm is on an entirely different screen.  Anyone know what the issue may be? Getting annoyed that I have to re-enter the  owner EVERY TIME I make a project update...

    Thanks for the details, in the future it helps to have some screenshots so we can follow along visually as well.
     
    What is the Default set to on the View form versus the Edit form?
     
    You said its a dropdown (not a combobox) so it should be in the Default property. For some reason
    1) either the source its using hasn't been updated
    2) the Default property isnt set
    3) the parent for the datacard is incorrect
     
    Is the Datacard set to Parent.Default?
