This video walks you through how to change the Created By in a Power Automate Approval. Yes, you can add a Requester in the advanced settings of the Approval and that does help if you view the approvals in Teams, however, if you use Outlook for your approvals then the Created by is still visible and there is nothing you can do to hide.
