I am creating a workflow with Send an HTTP request to SharePoint so anyone who created an item in the list could trigger this flow to send email to our mailbox, but the test was failed, and I am not quite sure which part could be going wrong.

According to your screenshot , This error code is your request body json is inVaild .
As searched , you can try to use this json Formatter:

And for the Json , you need to use the "" instead of the '' .
And you can first add the key field for this Api to check if it can run successfully. Then add the other fields you need above it .
