I have a canvas app and I would like to use access teams for records. My idea was to perhaps use a flow once a record has been created to
1. Create access team
2. Assign access team to the record
3. Add users to the access team
Can anyone provide guidance (say whether it is possible) on how to do this.

You would create the Access Team Template in advance, that is correct. This action will then basically assign that user to the Access Team (with the appropriate template) to the record.
So you create the template 1 time (as a configuration) and then utilize this process to assign users to the records related to that access team (providing them the security for the record according to the access team template).
Does AddUserToRecordTeam add a user to a team - but you have to set up a team template first and then associate it with an entity - so that an access team is created when a record is created. Then you call this action and associate users with the auto created access team?.
