Hey folks.
Fairly jr. user of Power Automate.
Wanting to scan a folder in a shared inbox for unread mail with specific subject lines and have to emails added to a sharepoint list.
I know how to set up for NEW mail coming in to an inbox or folder to create, but don't know how to do it for emails that are already there.

You should be able to use a recurrence and the Office 365 Outlook Get emails (V3) action for this.
In the recurrence you can define your schedule, for instance daily.
In the Get emails action you can configure to only collect unread e-mails. In the search field you can specify a subject by using the search parameter, https://docs.microsoft.com/en-us/graph/query-parameters#search-parameter
What do you want to copy to the SharePoint list/document library? The whole e-mail?
