I use PowerApps to Patch (modify) a sharepoint list, where I store data about users (educations).
I have to modify the app by granting access to users to see their educations.
Is it possible to solve this issue without giving permission to the users for the SharePoint list?
Yes, but in that case they really only need Read Access, not edit access. But they still need appropriate permissions to the list.

If the User will only read the data,
then also needed to grant access to the data (e.g. List - Sharepoint site)?

Power Apps doesn't provide a security layers so you always need to give the users access to the data source if they need to edit records. So there really isn't any data source where the app can edit the data but the user doesn't have access.
Can you advise any other PowerApps datasource, where the data can be hidden?
E.g. Dataverse, SQL Server?
In general the answer would be no. Users of a Power App need permissions to the underlying list if the app is going to Patch the list. There is one possible way to do it however using Power Automate. Here's a video that walks through a scenario where users have Read access to the list, but a Power App can update the list using a Power Automate flow with the Run Only permissions set.
