The Data menu is missing from my Power Apps left-hand menu list. I have a Dataverse menu, but no Data menu to choose Entities from.

@timl please provide a screenshot because I still don't see what you are talking about. I am looking for Option Sets to set global option sets but I am seeing this no-where. why on earth do they make this stuff so hard to find and there is no documentation published regarding it? it's extremely frustrating

The 'Dataverse' menu node is the renamed version of 'Data'. Entities were renamed to Tables, so you should find what you need beneath Dataverse > Tables.
