I completely agree, but in my experience new versions of Studio often introduce new bugs and problems. If you are lucky the bugs persist for a version or two and then go away again, which I guess is why this option to 'roll back' to earlier versions of Studio was introduced (although as you can see, you can only roll back a few versions and in a few weeks, as more new versions are released, the version you have found is working for you will drop off the list). Good idea to raise a support ticket with MS in the hope that this bug is addressed in an upcoming release of Studio (typically there is a new release every week or two).
You will probably want to make sure that if you test on one version and then export/import to a production version, that your production version is published under the same version of Studio as was used for testing.

Again, completely agree but based on (bitter) personal experience, I would not personally recommend Power Apps for any business critical function. Others here may disagree, and maybe I have just been unlucky with platform bugs and issues, but I have wasted a lot of time and effort investigating bugs/issues which turn out to be platform problems and not issues with my Apps/code.
