For example, each new table got a default "name" field as the primary field, how to rename this field or other new added fields?
This is really a Dataverse question rather than a portal question. At the time when you create a Table you change the default "name" to be something else, but after it is created you can only change the Display Name.
To change after creation:
@Fubar at the time when creating a new table, there's no option to change the default primary field "name", that's the issue:

You can select the option shown below to edit the table in Power Apps.
When the Power Apps/Dataverse designer opens, you can choose the Schema > Columns item to rename or to edit the columns in your table.
