How to change the label of a list view

I know that we change the label of list actions https://learn.microsoft.com/en-us/power-pages/configure/list-configuration

Is it possible to do the same for lists?

It is not clear exactly do you want to do (might help if you included an image showing what you are wanting to change)?
If you want different Column headers then on the Options tab expand the Override Columns expander in the Grid and you can specify the Display Name to override the default ones.
