Is it possible to set different SharePoint sites for different entities in the same environment? I don't want all the entities going to the same site.

    Double check what Document Location records you have - you will need a document location for the each Library. At the first level that 'parent' Document Location will have a link (or hardcoded) site entry, and will end up with child Document Location records (for each folder/record) which link to the parent document location. If you don't have the Folder level Document Location record you will need to create it.

    Although these steps work correctly, I am not able to see Documents under the related tab for the site that is not marked as default in the SharePoint site table. Are there any add'l steps that need to be executed?

    In order to create a folder in a different site, you have to manually create a document location and select the alternate site. It can also be enhanced using power automate. 

    This is instruction how to set sites manually. All sites have to be connected to the dataverse with one defined as default. To get more than one SharePoint site connected, walk each site through Document Management Settings inside of the dataverse. This will create the necessary folders for the tables designed to be connected. It will also add each site to the list of SharePoint Sites inside of dataverse.
    You can access Document Management by going to Advanced Settings > Document Management > Document Management Settings.
    • Enter in the URL for the site.
    • Select the tables that need to have folders created.
    • Repeat for each site.
