The simple answer is authenticated requires sign in. In most cases, your data has to be secured to avoid data security leaks. For this, you need an authentication method like Azure AD or any other provider.
Unauthenticated doesn't require login. An example is viewing the home page. Anyone can view your home page without signing in.
