We want to have custom column (option set) to select document name like CV, Invoice, ID by user when they upload document from dynamics portal : Something like this:

that's not an OOB feature.
What I suggest is to use a cloud flow and a manual setup of your form.
It take some more time but could be worth a try.

Instead of one file you would need to adjust the flow to multiple files depending on your wishes.
