I am trying to figure out a formula to getting a timestamp when a row is updated/inserted.
I have it currently triggered by a column total if it updates; however, I forgot that there will be times were values may change and the total might stay the same and if that's the case then the date wont be able to update due to the total value not changing.
Also, when the date value is populated, it is giving me wrong dates such as "1/20/1900 12:00 AM"

I assume you are talking about Sharepoint customized form. If yes then we have a "Modified" column
My apologies for the confusion, would that option be possible in sharepoint.
I haven't put the data in a powerapps yet, I'm trying to get the columns to function correctly before I put it into an app form for inventory.

Looking at your screenshot, you have a "Modified" column before "Modified By". To add this field to the form
Since this is a system field, user can't be updated

I looked at that in the edit view but didn't see one with a date/time column, so I tried creating one.
Maybe it's just could be me and I am missing it.

My simple thought. SharePoint already has a field called "Modified". Any reason why you are not using it?
