Why does the date format change when I dump the data from one Excel to another with Power Apps?

I collect the data from an Excel with a gallery, the data I collect is in date format, and when it comes to dumping it into another Excel, the format automatically changes. I need the format to be "dd/mm/yyyy" but sometimes it changes the month for the day can someone help me please

Responding as no one else has - Excel and Dates when used with Power Apps are problematic at the best of times - are you able to use SharePoint here ?

How are you updating the records? Are you using a Form or calling Patch? If it's the latter, can you post the formula that you're using?
