The mobile app doesn’t have an option to remove an app from your ‘my apps’ list, I am using the iOS app.

it could be, that this question is in the wrong board. You will find Portals users/customizers here. May be, this questions gets better answers (than mine 🙂 ) in other boards.

Are you talking about PowerApps for mobile app or Dynamics 365 app? In both cases, you cannot hide/remove apps in the mobile itself. You can restrict access to apps using security roles - see more about security roles here and about applying to app here.
I agree with @chleverenz - to get the answer faster please about Power Apps ask a question in Power Apps General forum not in Portal forum.
