Hi, 

How to total all record items in an entity.

    One way to do this is through Roll-up fields.  The roll-up field needs to sit on the parent entity for those sub records (which in your example is probably something like a Work Order?).  Take a look at this documentation - make sure you read the considerations section to understand some of the limitations.

    To supplement on @HSheild, where do you want to store that total, if it's in a parent entity I would go with rollup like mentioned, otherwise if it's in the current entity or don't want to use roll-ups, you can always calculate it manually with Power Automate (using the Common Data Service (current environment) connector) and update the total in a custom field/column when a new record is created and/or the cost is changed.
