Approvals Email Formatting--seeing HTML tags

I am working on a Start and Wait for Approval workflow with the Details formatted using Markdown. The resulting notification looks fine in Teams, but in Outlook it's showing HTML tags instead of the correct formatting. To simplify things, I removed all formatting, but Outlook is still showing <p> and </p> tags around the text block. Oddly, I have many other approval workflows where the Outlook emails look fine. Did something change recently since I created this one?

I have tried several fixes here that didn't help. Adding a compose action for the body of the email didn't change the result. Adding an HTML to Plain Text conversion step actually made things worse, adding more junk markup to the resulting text block.

Appreciate any thoughts on this. I'm stumped.

Workflow:

Teams output, as expected:

Outlook output, with mystery HTML tags:

    Hi @SAHoff

You can try to put the text in Details into a Compose.
Then quote this Compose in Details:

    Hi Levi,

Thanks, I did try this. Got the same outcome, though. Any other ideas?
