Hello,
I'm wondering if there is anyway to upload attachment from my powerapps application to a sharepoint list without granting access to the users to that sharepoint list?
The idea is the files they upload shouldn't be visible to them on sharepoint or they actually should not be able to go the sharepoint site itself.

Unfortunately, SharePoint as a data source does not offer a reliable way to do this. When a List is shared with users (so they can use it as a data source), they have access to the entire list by browsing to it.
If you need a higher level of privacy, consider using Dataverse which offers row and column security.
