I think what you are trying to achieve here is very similar to this Microsoft Template: Create a Planner bucket and a task inside it, on Microsoft Form submission | Microsoft Power Automate. The main difference is that it's getting the information from Microsoft Forms and not an email. In that case you could use a different trigger like this one Trigger a flow when a new email arrives - Power Automate | Microsoft Docs or perhaps something inside the email body How to extract data from email messages in Microso... - Power Platform Community (microsoft.com).
