After I migrated a SharePoint List from one site to another using the "Save as Template" method.
"The Get Information from" option is not editable.
As part of the migration, this column needs to be pointed at a different list
Is there any solution to enable me to edit this information?
The "Get information from" property isn't editable after the lookup column is created. You mentioned that you created the list through a list template, so the key there is that the list template needs to be modified in the template before the new list is created from it. Here is a blog post that goes through this process.
If you just need to fix an existing list and aren't creating any more from the template then you could use PowerShell. Here is a blog post about using PowerShell to fix a Lookup column.
