There used to be a hidden screen you could access by swiping from left to right, where there was a logout option, but I can't seem to access this anymore?!I would like to log into a different account for testing purposes.

You can log out by selecting your avatar in the top left corner of your Home screen then scroll to the bottom. You will also find that once you sign into other accounts they will be in a drop-down list near the top of this panel, making it easier to switch accounts. Closing the app is done by swiping from the left when it is open and then confirming the close. Works fine on my Pixel Pro 7.
