Hello,
I'm just starting to work on my first app. Is it possible to customize the choices in a day of the week field? I need to only show the actual days Monday through Sunday, but I'm seeing weekday, weekend, etc.

Can you describe the scenario a bit more about what you are talking about customizing? Where are these choices coming from and what is it that you want to change. Perhaps a screenshot or two would help also. Otherwise, your question is quite generic and difficult to answer.
My apologies. I'm a complete newb. I'm customizing an app that was developed by someone else. There is a column called Day that is the type Choice. It offers Monday through Friday, as well as Day, Weekday and Weekend Day. I need to get rid of Day, Weekday and Weekend Day as options, but it seems to be locked. Please let me know what other info I can provide. Thank you.
No worries at all. Just wanted to get a clearer idea of what you are referring to.
This is not so much a PowerApps question that you have as it is more a DataVerse issue.
What you are trying to do is to change a Managed choices non-customizable Options set called sameweekday_options. Which, as all those nice adjectives that preceded "Option set" in that last sentence imply - not something you can change.
You could create a new option set with just those options in that you want and then change your base table to use that option set instead.
