Is there a way to toggle a choices column from the Default property of the gallery I have selected to another value with a toggle switch?
So if I toggle to say the job is complete the dropdown with the In progress optiong will change to completed choice value? Or would it be easier to toggle the switch to change a column value and then run an flow?

If you want to change the default option of drop down when changing the value of toggle, I suggest you use a formula, which is faster than patch value to SP list.
