I was wondering if a person has made an automation in their Power Automate Desktop and shared it with me, but then this person left the company and naturally, all their accounts are deleted, would I still be able to have access to the project? I'm wondering what would be the best practice to share Desktop projects in this case.

You can change the owner of a flow. Follow the steps defined here to do that: https://learn.microsoft.com/en-us/power-automate/desktop-flows/manage#reassign-desktop-flows
The best practice, however, is to have a service account as the owner of the flow and use personal developer accounts for making changes, but not owning the flow.
