Is there any required info you need to include in this blank table?
I suggest you add a button to create create a blank collection including field name like below:
Collect(coll,{Title:"",FieldName1:"",FieldName2:"",...})
Then add a Gallery with blank textinput controls, click the above button to add records:
Once you click the + button, a blank record will be generated, and you could enter within the new TextInput, click other place to trigger to the patch() thing, that's how OnChange property works.
Add a HTML text box and set the HtmlText property as below:
"<strong> Information: </strong>" & "<table width='100%' border='1' cellpadding='5' style='border:1px solid black; border-collapse:collapse'>" & "<tr style='background-color:#efefef'> <th>Title</th> <th> FieldName1</th> </tr>" & Concat( Gallery27.AllItems, "<tr> <td>" & Title& " </td> <td>" & FieldName1& " </td> </tr>" ) & "</table>
Then, add a send email button including the table data as below:
