Power App/SP Data to Excel Template

I am looking for the best method to transfer information from a SharePoint List record to an Excel template file.

I currently have a SharePoint List 'EmployeeShort' that is updated, etc. via a Power App.  When an employee leaves our group, they are identified as a "Separated Employee".  An email is auto-generated (via a Flow) to notify supervision of the separation.  With this, an option is also provided to enter information into a hiring request form 'HRF'.  The fields/columns for the HRF are currently associated with the EmployeeShort list and are patched.  Based on some online support, it appears a method is to create a "collection" and then through JSON supply information to a CSV file ultimately to the template.  Following are a few questions...

1.  Does the method suggested (JSON, etc.) seem the most appropriate for the process described?

2.  For my collection (colEmployee) I am getting ALL list information.  How do I specify information for the specific employee from EmployeeShort?

3.  Because I only need certain columns from the list, is it more efficient to specify those choices for the collection?

Any assistance is appreciated.

    Here is a link to a comment that I made in another post that was super in depth. To save time I just added it as a link. This is an explination on how I used excel templates with flow and powerapps to populate new excel docs with employees hours worked then sent them via email attachment to accounting.

    1) This does use JSON function.

    2) I use the compose function in power automate to only get the info I need in my excel table template.

    3) This will be taken care of in the compose I think as well.

    Hi @mmollet Thanks for the information.  I will definitely review.

    One more related question.  I have the following in the OnSelect of the 'Save' for the HRF.  For the ClearCollect, how do I specify/filter the current EmployeeShort list record that I am working with (varFormData)?

    Patch(
    EmployeeShort,
    varFormData,
    frmEEInfoEntry.Updates,
    frmHiringRequest.Updates
    );
    ClearCollect(
    colEmployee,
    ShowColumns(
    EmployeeShort,
    "HRF_Pos_Dept",
    "HRF_Pos_HiringMgr",
    "HRF_Pos_SeniorLdr",
    "HRF_Pos_JobTitle",
    "HRF_Pos_NoPosFill",
    "HRF_Pos_BkFillSep",
    "HRF_Pos_Justification"
    )
    )
