Populate dropdown based on available record in gallery

Hi,
I have a gallery with items linked with a cost center. So for example there are three items with different cost centers.
I wanted to populate the list of items in the dropdown with only the available record in the gallery. Since the gallery will be updated as user create new item which will in turn update the dropdown.
How do I achieve that? Should I create a collection? Also, I am using dataverse as my datasource.
