Hello,
I know that the limit of the approval before it times out is 30 days. If in case it was re-assigned before the 30 days, will the countdown reset for that flow?

I am afraid not. I assume that it is from the run start time but not the re-assigned time.
Because both the run duration and storage retention are limited within 30 days. Please check the following doc:
