Conundrum! Can it be done?!

I have a Sharepoint List of tasks that I am pulling in as a form in Power Apps. There are 10 separate tasks and each task has 3 separate columns: Task (Yes/No), Completed By(Text), and Completed Date(Date Only). I currently have the form in power apps set up with a toggle for the Yes/No and then the Completed By and Completed Date for each task is in View mode. The Completed By sections have their default set as:

If(Task.Value = true, User().FullName, "")

The Completed Date sections have their defaultdate set as:

if(Task.Value = true, Now(), "")

The issue is that this single form could have 3 of 10 tasks completed and then submitted and then another user will come into the page and complete 2 of the remaining tasks and then click submit. When the 2nd user comes in, their names are populated in the 3 tasks that the 1st user filled out. I understand why this happening, but I want to know if there is a way that I can couple the Parent.Default query in an if statement with the above code so that if the datasource already has value, then Parent.Default, otherwise the above if statement. I cannot seem to figure the syntax or the way to get this to function properly. Any ideas on how to make this work or another way to get the same end result?

    Set the Default values of the controls respectively to:

    If(Task.Value, Coalesce(Parent.Default, User().FullName), "") and

    If(Task.Value,, Coalesce(Parent.Default, Now()),"").

    This should work as long as the form is saved between users.

    The same formulas above could be put in the Update property of their respective cards.
