Hello,
I would like to investigate what are the source (not only the connector) used in my tenant (SharePoint list, email...).
After test, I don't think it's possible. What is your opinion ?

Could you describe more clearly about the sources that you want?
If you want to check the connection that apps use in this talent, you could check here:
If you want to check one speific app's connections, you could choose the app's details to check.
If you want to check users' email or other profile in this talent, you need to check in azure admin center.
You could only check things about powerapps in powerapps studio.

The solution that you propose does not match my wish.
As an Admin, If an App has a SharePoint connector (to a list), I would like to identify the list.
The reason is simple, as site resources are free to use with Flow and Power Apps once you are a member of the site, I need to check if some Corporate App are override by customs app.
