I have a combo box in my list. It works fine one first load but when I save data, close the form and open it again. I can't access the combobox. The dropdown opens and closes right away.
Check the properties for combobox items and which field is displayed.
When making modifications to the datasource for the items property, PowerApps will often 'reset' which field is displayed.
Also check that you haven't got any code on the OnSelect of the combo that could be causing strange behaviour.

I've made a similar test but not met the same problem like your description.
Could you show me your settings of the combo box?
Please check your connection's condition.
What's more, after making every changes of combo box you need to reset combo box's primary text and search text.

Hi, I deleted the form and created a new one and no longer get this error.
