There are no performance issues with adding one image with the Add Picture control to a SharePoint image field. Where have you seen it recommended not to do this?
Every tuturial you found about using JSON or SharePoint attachments is because for a very long time, Power Apps did not directly support SharePoint image fields and these were the 2 workarounds. This is no longer the case and you should ignore the tutorials that recommend these techniques.
Thanks for your quick response. Is there something I should consider about storing the pictures directly on my Sharepoint list? What about the size? Is it okay to keep the images in just one SharePoint list field?
Is there a way to restrict the size on the App or the SharePoint side?

With SharePoint and Power Apps, you can access thumbnails of the images that are uploaded. Therefore, large image uploads and keeping all the images in a single SharePoint list field will not cause as much of a performance degradation as you might imagine (particularly if you're displaying multiple rows/images in a gallery control).
To restrict the size, you can use the technique here to validate the file size before saving it.
