Hi,
I was wondering whether someone would be able to advise whether I can use Flow in order to take data from Zoho Reports (API Documentation) and Update DEAR Inventory (API Documentation).
I can get my head around doing basic flows with apps that already have an integration but this kind of thing seems like it could be done but I don't know where/how to start.

If the API you mentioned here is REST API, then you may consider build up Custom connector for those APIs:
Register and use custom connectors in Microsoft Flow
Also you mean consider use Http Action under Microsoft Flow:
