I want to set up a table as seen in the attached document.
Where would be the best environment to do this - Excel, SharePoint or Dataverse?

I will be using this table in an app
The app will have placement cards for viewing the following metrics:

Daily metrics
Transactions Today
Credit Transactions Today
Amount Credit Transactions Today
Debit Transactions Today
Amount Debit Transactions Today
Net Position Today
 
Total metrics
Total Transactions
Total Credit Transactions
Total Amount Credit Transactions
Total Debit Transactions
Total Amount Debit Transactions
Net Position

    Data Setup
    I would definitely use Dataverse. It is way easier to manage and you can put security around it and easier to report on the data outside of the Power App.

    Its is good to have Dataverse or SharePoint. Both looks good.
     
    Constrains about License then use powerapps with sharepoint
