I am trying to use a dataverse table as an environment variable so I can easily switch datasources. I cannot find anything other than trying the entity id for the value in EV. Either I am doing this wrong (probably), or this doesn't work. I'm hoping to get an overview of the steps on how to do this and how to implement the variable in the app. Thank you so much in advance for your help!
You could try using the Table Logical Name as an Environment variable.

When I select environment variable as a table it doesn't give you the current value option. Just the current environment and the default value.
Default Value is fine. So long as you change the value in the other environments.
