Is it possible to make PowerApps the deafult experience for a SharePoint list's forms? (New, View and Edit forms)

No, I don't think PowerApps would work with SharePoint forms.
As the SharePoint forms don't support SOAP and REST Web service connections.

You got my question right.
Microsoft has been positioning PowerApps as an alternative to InfoPath, and I was wondering if it's just roadmap info, or if there was already something out for that.
Happy to continue using JavaScript until there's a PowerApps option.

Yes, that is true.
There are improvements for SharePoint and PowerApps, currently you could embed PowerApps directly SharePoint pages:

I think there should be new features (or improvements) for PowerApps to cover the infopath/SharePoint Designer scenario.
