I'm trying to add the Picklist on CDS as one of my data sources for my app. When I add the CDS data source it asks me to select an Entity but no option to select Picklists. Any help would be great. Thanks.

Picklists can't be connected as a data source as it is only a Field data type within a Entity. PowerApps would refer entity as available Data source, for data fields within Entity, there is no way to connect to it directly under PowerApps.
We could add the Picklists into a custom Entity, then use PowerApps to connect to this custom Entity, then reference the picklists wanted.
