Populate Word template with default date

I'm starting with a PowerApp to populate a Word template / convert to PDF. I've used Today() as default date in a date field as this will primarily be the default for when it is sent. This is the date the user will see - problem I'm having is if the user doesn't change the date and leaves the default it doesn't populate the date field in the Word template. Is there any way to fix this issue? Thanks for your help

Can you show your workflow and how you are populating your Word document, and in particular the date field?

Thanks for responding - I did actually get this working using an expression rather than just designation the field
