I have 2 checkboxes within a gallery, when I select a checkbox I want it to unselect the other and vice versa to prevent 2 values being patched to a SP list. Due to it being in a gallery I cannot use variables as it would then apply to all the checkboxes.

you need to use a collection instead of live datasource. when someone selects the check box make is selected .you just need to lookup the collection and if the column value for other check box is true make it false.
this will give you an idea. it is little complex but achievable.
