Hardcoding API data

Hi

So i have been given an API URL and I've successfully plugged this in to excel to pull the data into it. However the organisation that the API data is coming from have set up a deletion process on the data after 1 month, so we would loose vital data that is older then 1 month. This is purely to save space on their data storage and not due to data protection or anything.

I would like to know if there is a way of using a flow to copy the new data coming into the API data table and hard code it into another table so we don't loose it. I've used power automate very lightly in the last few months and keen to use it more.

Thanks
