I have created a Sharepoint list with about 100 possible queries on project content and based on this I have created an edit form in PowerApps. Depending on certain answers only selected fields (DataCards) are displayed there.
Now I want to output the content of this form (and not the whole sharepoint list) via button as CSV file and attach it to an email. Unfortunately, I can only find solutions on the net that are based on a gallery, but not on a form - can anyone help? Or is there a way to map a gallery based on this customized form? Then I might find a solution myself.

Do you mean you have about 100 columns in the list? If so, it seems impossible to specify how many columns are in the form when a user completes their project. As the result, I would recommend that you export form data from SharePoint list in a Power Automate flow when item is created or modified:

So, in the list customize form, no need to trigger any flow. This automated flow is triggered on list item creation or modification.

Thanks a lot for solution, I will try it very soon. But for user experience it would be better to trigger the action by a button in powerapps, otherwise he will get a E-Mail every time he saved the project status (and changed the sharepoint entries) - will be great to have a solution for that. Or do you know a possibility to create a gallery based on the changed form data? I would then set the visibility of the gallery to false (there are some ideas based on galleries in the internet).

Data of a Form is a record, while Gallery uses table as data source. If the form only includes a few columns/fields, it's possible. However, you have a plenty of dynamic fields in the form, which makes it impossible. For your concern, you can use When an item is created trigger instead, so the flow will be fired only when new entry is added into the list.
