I have recently installed the COE and can see the Connectors used in apps and flows from the Power BI Connector Deep Dive. Is there a way to identify which flows are associated with the connectors?
you can find the flow connection details from "Power Platform admin view" app which comes from core components of CoE solution.
Or
Within the dashboard (Cloud Flows) you can filter the flows based on connection.
