I'm trying to default the current user to the employee field. But it doesn't seem to work I keep getting "invocation of unknown or unsupported function" error. I also can't seem to connect to outlook 365. I'm not allowed to even search it up.

Can you please share your code? This will help me to understand why the "invocation of unknown or unsupported function" error is appearing. Also, what type of field is employee? What datasource are you using?
As general advice, you do not need a connector to determine the current employee. You can use one of these code snippets below.
User().FullName
User().Email

You can't change the current user. User() returns the identity of the user running the app. That is generated by the system and can't be changed. Power Apps has no capability to do impersonation, which is what it sounds like you want.
