Why can't we no longer easily get lookup or choice fields text labels when using the new Dataverse in the field picker?

Why is this functionality been removed?  Too easy for the user?  This product is so full of flaws, it's frustrating. It's like no developer or program managers are using or testing it or even looking at this awfully slow forum where bugs and feedbacks stays stagnant for years....
