How to set a trigger condition for a people field.

I have an approval workflow I would like to trigger when I enter a new document to a document library. I'd like to approval to go to a people field that needs to be entered. The modern sharepoint doesn't have me enter the people field right away so it doesn't catch the trigger and sends the approval. Is there a way to do this?

    If the people field is mandatory then users won't be able to upload or create a file without choosing an approver. So the field should never be empty when the flow triggers.

    If I do that, the workflow will trigger and wait until the people field has something and then run or will it just fail?

    When using an automated trigger like When a Document is Created there is no way to be prompted to enter an Approver.  The easiest way is to update the metadata of the document library to include a mandatory Approver people column. That way a user will be prompted to enter that value when uploading a document before the flow is triggered. You can then use that entry to set the Approver in the Approval.  The key is to make the Approver field mandatory.
