I have a requirement where we need to create excel data source for each user in organization and then need to apply crud operations with in that using canvas app. Do we have any approach to implement this scenario by dynamically connecting to excel data source tables within canvas app.

Am wondering why you want a different table for each user. Instead you can create a column in one table for User names. Then on your form that field Will hold or contain the user names as they enter Data.
If you want to view Data you could filter the table so each user is able to view his or her own record.
